Culinary Farmstead was conceived out of the love of food, nurtured through years of cooking by Chef Jess, and raised on Tin Canyon Farm where it all started. 

From basic skills and certificate programs to specialty pasta classes, regional cuisine dinner parties, and farm-to-table experiences, Culinary Farmstead aims to ignite the passion for food and cooking in everyone. 

A portion of all profits is donated to Food Bank of the Rockies, No Kid Hungry, and other local organizations that help combat food insecurity.

Jess is a Chef, Pastaia, Cookbook Author, Herbalist, and outspoken food security activist. She's the owner of Tin Canyon Farm in Pagosa Springs, CO, where she cultivates, cooks, and leads professional chef retreats.


Her love of pasta making started in Sicily where she lived and learned to make pasta from her Grandmother and Great Aunts. While exploring her family history, which spans from Sicily and France to Germany and Montreal, Jess has fused her passion with the cuisines of her ancestors. She has since become one of the experts in her field and teaches the art and history of pasta making as well as creating the very best medium for growing culinary gardens.


Mediterranean, local farm-to-table, and apothecaric dishes make her dinner parties and classes truly unique.



Classes and Culinary Experiences are held in various locations from Pagosa Springs' and Durango's local gourmet stores to our hobby farm. Dinner parties can be scheduled in a variety of locations from your vacation rental or home kitchen to a larger venue. Are you a restauranteur? Chef Jess is available as a guest chef.
